Yelapa is Jalisco state on Mexico’s west coast. Inspired by a Yelapa delight, a simple, rustic banana custard pie with a sturdy, sandy-textured crust. We blended a banana into the custard mixture for a creamy filling suffused with tropical flavor and topped off with caramelized Banana slices.
